I don't have many of these yet (too busy hoarding Senvidae) and most of the ones I have don't super excite me, but I do have these that I'm fond of:
Lapis Lazuli for the beautiful but simple colours reminiscent of gems peeking out between rocks:

Donnerschlag for an overall nice rhinosaur that I'm having trouble describing what I like about; just nice:

Sahara, just for the strange but uniform colour scheme (was briefly tempted to call her 'sulphur' or something along those lines, but I like the -a ending of 'Sahara' too much to say no to it):
